If you’ve never made cheesecake before, don’t worry—this one is surprisingly doable. It’s creamy, tangy, and feels fancy enough for a celebration, even if you’re just eating it “because it’s Tuesday.”
Ingredients
Crust
• 1 1/2 cups graham cracker crumbs (or vanilla wafer crumbs)
• 1/4 cup sugar (optional)
• 1/2 cup melted butter
Filling
• 24 oz cream cheese, softened
• 1 cup sugar
• 1 tsp vanilla extract
• 3 eggs
• Optional: 1/2 cup sour cream or Greek yogurt
Topping (optional)
• strawberry sauce, berry topping, fruit preserves, caramel, etc.
Directions
1. Preheat & prep
• Preheat oven to 325°F (163°C).
• If using a springform pan, you can line the bottom with parchment. (Optional but helpful.)
2. Make the crust
• Mix graham cracker crumbs + sugar (optional) + melted butter until it looks like wet sand.
• Press into the bottom of your pan.
• Bake 10 minutes, then remove to cool slightly.
3. Make the filling
• In a large bowl, beat softened cream cheese and sugar until smooth (scrape down the sides).
• Mix in vanilla.
• Add eggs one at a time, mixing just until combined (don’t overbeat).
• Stir in sour cream/Greek yogurt if using.
4. Bake
• Pour filling over the crust.
• Bake for 45–60 minutes, until the edges are set and the center still jiggles slightly.
5. Cool
• Turn off the oven, crack the door, and let it sit inside for about 1 hour.
• Then cool to room temperature and refrigerate at least 4 hours (overnight is even better).
6. Add topping + serve
• Spread your topping over the top.
• Slice with a warm knife (wipe between cuts for clean slices).
